One big Onion – chopped

Turmeric Powder

Chilli Powder

Pureed Tomatoes

1 tsp Garlic

1 tsp Ground Pepper

2 tblsp Brown Sugar

Dash of Vinegar

 

METHOD

  • Braise chopped onion till pink and add salt, turmeric & chilli powder.
  • Braise quickly & add puree tomatoes.
  • Stir & add garlic, pepper, brown sugar and vinegar.
  • Add prawns & cook until done.

1 cup Cake Flour

2 level tsp Baking Powder

Salt

1 tblsp Ghee

Green Chillies

1 Egg

1 can Cream Style Mealies

Dhania

Little Milk to form batter

METHOD

  • Sift/whisk dry ingredients in a bowl.
  • Rub in Ghee.
  • Add wet ingredients to form batter.
  • Heat oil/ghee in a pan
  • Add spoonful of batter at a time to the pan to make crumpets.
  • Flip over & fry until both sides are golden.
  • ENJOY!

Alternative option : Mince Crumpets

Omit Mielies and use 4 tblsp samoosa mince instead.

2 cup ghee2 cup sugar 2 eggs 2 cups sojee (tasty wheat or semolina) 2 cups flour 2 cups milkSoak a few strands of saffron in water 

METHOD

  • Beat ghee and sugar until creamy
  • Add eggs, sojee, flour & milk & beat  
  • *Allow mixture to stand overnight* – bake in the morning in a huge tray. 
  • Grease your tray with ghee then put sultanas and khus khus, pour mixture in, put sultanas on the top again, khus khus and sliced almonds, sprinkle soaked saffron mixture on the top
  • Put to bake for 180 degrees celsius for between 35 to 40 minutes

Elachi

Pepper corns

Whole Jeera

1 cup cubed or pieces chicken

2 tsp Salt

1/4 tsp Turmeric

2 tsp Dhana Jeera

Crushed Green Chillis to taste

1 tsp Ginger Garlic

1 cup processed oats (Till Powder)

1 Litre Water, or more

Chopped Dhania

Chopped Mint

Vagaar : 1 tblsp Ghee & chopped Shallot

METHOD

  • Braize 1 onion in ghee/oil 
  • Add 1 cinnamon stick, cloves, elachi, pepper corns & whole jeera.
  • Add chicken, salt, turmeri, dhana jeera, crushed green chillies & ginger garlic.
  • Cook until water evaporates.
  • Process 1 cup oats till powder and add it with 1 litre water.
  • Stir until it boils, adding more water if necessary.
  • Add chopped dhania and mint.
  • Make a vagaar with 1 tblsp ghee and chopped shallot.
  • Cook until done.

  • Beat the next 3 ingredients (Egg, oil, milk)
  • Add wet ingredients to dry ingredients
  • Add water to make into a soft scone dough
  • OPTIONAL : Add soaked dates, fruit mix, mixed seeds or vanilla extract – The variations are limitless.

  • In a pot, add butter and add yoghurt, mayonaise, crushed garlic, lemon pepper, salt, crushed green chillis, lemon juice.
  • Place chicken in mixture.
  • Layer flat.
  • Cook until done.
  • Serve with Garlic Pita

  • Clean and wash carrots
  • Slice in the middle and remove the core.
  • Slice carrot into thin fingers. (Julienne)
  • Put the carrots in a colander and sprinkle salt and set aside for an hour.
  • Put fresh crushed garlic, oil, salt and chilli powder in a bowl – make a paste and add the carrots.
  • ENJOY!

METHOD

  • Sift flour & add salt.
  • Make a firm dough with water.
  • Knead well.
  • Separate into quarters
  • Take each quarter and divide in six equals.
  • Roll out the sets of six to the size of a saucer.
  • Coat with oil, sprinkle flour and layer.
  • Layer four by six rotis.
  • Cover and set oven to 180 degrees celsius
  • Grease a big tray.
  • Roll one stack at a time and bake.
  • Separate while hot.
  • When all are done cut into strips and use the balance to fry.
  • Fill with filling if your choice!
